Ramp Pesto Potatoes

Can be served warm or cold. The pesto is great on a steak or a piece of fish.

Boil the potatoes soft in salted water, drain and place in a large bowl.  Place ramps, pine nuts, Parmesan, and oil in a food processor and blend until you have a chunky sauce. Season with salt and pepper.  Mix potatoes and sauce and serve.
