Spring Omelette with Cottage Cheese & Radishes

I eat three eggs every morning and lately I’m all about omelettes. This one is really fresh and filling. It will keep you going for hours.

Beat eggs, water, salt, and pepper in a bowl.  Add to a small nonstick pan and cook until set on both sides.  Place omelette on a plate and top with cottage cheese, avocado, watercress, and radish.  Sprinkle with a little salt and pepper.
