Herb Grilled Chicken with Cucumber Salad

My go-to summer barbecue dish is so easy to make and always a hit!

CHICKEN:  Start by gently loosening the skin on the chicken to create a pocket.  Fill the pocket with herbs.  Rub the chicken with olive oil, salt, and pepper  Place on a hot grill and cook until done, about 20 minutes  SALAD:  Place all the ingredients in a bowl and toss  Season with salt, and serve with grilled chicken.
