Place the garlic in a sheet of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap up and bake at 360°F for 30 minutes. Place garlic in a food processor with chickpeas, feta, lemon, and remaining 2 tablespoons of oil. Blend until smooth and season with salt and pepper. If it seems too dry, just add more oil. Spoon into a bowl, and top with a drizzle of olive oil, thyme, and salt.
